Moroccan Truffles (GF)
These sweet tasting morsels are perfect finger food for gatherings or served with hot drinks on winter evenings.
Ingredients
1 cup of slivered almonds, toasted
1 cup of chopped pitted dates
1tablespoon of rose water (see page )
1tablespoon corn syrup
½ tsp ground cinnamon
½ cup of desiccated coconut
Place slivered almonds under the grill or in the oven in a thin layer until just brown. Mix the slivered almonds and chopped dates together and place them in the blender, blend until both are coarsely ground. Transfer the mixture to a large bowl and add the rosewater, corn syrup and cinnamon. Mix well using your hands, when all ingredients are thoroughly combined, shape into balls and roll them in coconut until they are evenly coated.
These can be kept in an airtight container in the fridge for several weeks. |
