I made these last night and I am ADDICTED. I ate 5 but I could have eaten triple that amount.

This recipe is from The Gawler Foundation Cookbook, "A Recipe For Life," by Dorothy Edgeglow. It is a great book filled with ultimately healthy and tasty recipes and nutrition / health advice.

3 medium potatoes (scrubbed)
1 zucchini
1 onion
1 egg's worth of egglike (I actually just omitted this)
1 teaspoon mixed herbs
2 tablespoons rice flour
1/2 teaspoon Herbamare (I just used salt)

Grate the vegetables and let them stand for 10-15 minutes.
Squeeze out the moisture through a sieve.
Add the herbs, egg-like, flour and Herbamare. Mix well.
Grease a stainless steel frying pan with oil, heat and add the potato mix (having shaped it into pancakes - they may seem like they won't hold together but they somehow do) cook gently for 15-20 minutes.
Turn pancakes over and cook on other side for another 15 minutes.
Can be baked in the oven for 3/4 hour instead.

That's the best thing about them - they feel like a naughty food (and very comfort foody too) but they aren't. You actually don't need much oil and everthing else is healthy. If you use red potatoes like Desiree they also have a lower GI which makes it that little bit better too. I could eat them everyday!!!

I just made the recipe for the potato/carrot ones from the vnv website but will have to try the above recipe also. I got an idea from one of Kurma's cookbooks - you heat some oil in the pan and then place metal egg rings (buy them from supermarket) in the pan and spoon the mixture in to them and press down, they come out perfectly! I cook on one side for several mins then just turn the whole thing over then its easy to lift the egg ring to the side and lift the "pancake" out of the pan
