Serves: 1.

in saucepan:
1/4 cup instant oats.
1 tsp cinnamon (you may like less)
fist of sultanas
1/4 cup boiling water, + 1/4 cup milk (soy, rice, almond, you know).

chop up one apple into bite size chunks.
place in porridge.

cook, simmer, stirring, for approx 2-5 mins (I usually add more water bits at a time, it's an art, getting soft oats.)

It looks a mess, but it's delicious.

serve with cold milk, and a little flaxseed oil.

pear and nutmeg works well too. and chopped roast almonds sprinkled on top is too good.

It tastes even better if you soak the oats and sultanas overnight in 1/4 cup water, then add the remaining liquid and warm up on the stove. Creamy. mmm. hot. mmmmm. i'm warm. yes. i am.

I once watched Jamie Oliver do a fry-up for his "friends" after a big night out whilst they watched England play football. I was unimpressed with the food, but knew there'd be a great opportunity to make a delicious veggie breakfast in similar circumstances. I think it really has to challenge as Greatest Breakfast in the World Ever (tm).


1. TonyG's Terrific Tofu

500g firm tofu (scrambled with your fingers)
1-2 portabello mushroom, or similar quantity of other mushrooms (diced)
1 brown onion (diced)
1/2-1 capsicum (diced)
2-3 cloves garlic (diced/crushed)
2 tbsp soy sauce
1-2 tsp turmeric
olive oil

Saute the onion for maybe 5 minutes. Add the capsicum for maybe 3 minutes. Add the mushroom(s), and after a minute, add the garlic. When the mushrooms have really reduced and browned, add the tofu, and then the soy sauce and turmeric. Stir until a consistent yellow colour.


2. Palestinian Tomatoes from Madhur Jaffrey

3 ripe tomatoes (top and bottoms removed, and then chopped horizontally into thirds)
1 green chilli (diced)
2 cloves garlic (diced/crushed)
1 cup tomato juice
3 tablespoons parsley (finely chopped)
olive oil

Heat the oil in a pan, and add the chilli and garlic. 30 seconds after it begins to sizzle, spread the tomatoes over. After a minute or two, flip the tomatoes. After another minute or two, add the juice and parsley. When the juice starts to boil, turn down to a simmer, and leave for 5 minutes.


3. Add the freakin' toast

Put even amounts of both on two slices of toast spread with Nuttelex, Tofutti cream cheese, or (my favourite) avocado. DON'T forget the sauce from the tomatoes - it's delicious! I'm just guessing with some of the quantities, but I reckon it should serve 4-6 people. I made it for my grandfather who grew up during the depression and thinks every meal needs at least 7 types of meat, and he loved it (as did the rest of my non-vegetarian-let-alone-vegan family).


Who can come up with a better breakfast - I challenge you!

Ingredients:
2 Onions
6 Vegan Hashbrowns (most brands are vegan, just watch out for beef tallow)
4 Vegan Sausages
4 Slices Fakin' Bacon
2 Tomatos
8 Mushrooms
Handful Spinach
1 Avocado
4 slices White Bread
As little as poss Canola oil
Large tin of spag or baked beans
2 Pineapple rings
Nuttelex
- Scrambled Tofu from above

1. Heat oven to 100 degrees celc, heat oil in frypan.
2. Fry onions, hashbrowns, put on plate in oven.
3. Put toast in toaster
4. Put Spaghetti/Baked Beans in microwave
5. Fry mushrooms, pinapple rings and tomato
6. Nuttelex toast, put in oven with onions
7. Put veges in oven on separate plate
8. Wipe down frypan then fry up bacon and sausages.
9. Quickly fry spinach, slice avo into thin slices.
10. Whack it all together, add scrambled tofu.

Serves 2

Hello all. First post from a new member!

A friend showed me this recipe last year, and I've had it every weekend since! Not too sure where it's from.

Ultimate scrambled tofu

3-400g tofu, crumbled
2-4 spring onions, sliced
1/s a capsicum, small dice
2 cloves of garlic, fine dice
3 heaped tablespoons of savory yeast
1 tablespoon of dried basil
pinch each of cumin and turmeric
A dash or two of light soy sauce

Heat oil in a pan and add the tofu (yes, the tofu first!).
On top of the tofu, scatter the basil, spices, capsicum and spring onion.
Scatter the yeast on top of everything.
Leave it to cook for at least 10 minutes (up to 15), without stirring.
When the tofu has stuck to the pan, scrape it off and mix the pan well.
Continue cooking for another 5 minutes, at the end of which throw in a few dashes of soy, then serve!

The texture of the tofu is kind of crunchy, and the favour is to die for!
