Meg’s Easy Scrambled Tofu
Tofu can be used as a base for any kind of flavour. It has a very mild taste of its own and easily absorbs the character of the ingredients added to it. This recipe is one that everybody can make; it takes five minutes and comes out like fluffy scrambled eggs.
Serve on toast or as an accompaniment to a hearty big breakfast.
Ingredients
500grams of firm Tofu
2 teaspoons of sesame seeds
½ teaspoon of vegetable stock powder
a sprinkle of turmeric (for colour)
cracked black pepper to taste
salt to taste
1 tablespoon of olive oil or vegetable margarine for frying
Method
Using a fork, mash the tofu into morsel sizes of your choice. With the less firm tofu, these will become smaller as they are mixed in the pan so make them slightly larger than needed.
Add the oil or margarine to the frying pan and once it has become hot enough, add the tofu and stir. Whilst stirring, add the sesame seeds, stock powder and cracked black pepper. Sprinkle the tumeric powder into the mix an stir some more, when the colour is even throughout the tofu, taste and determine how much if any salt is needed.
Timesavers: There isn’t much you could do to make this recipe quicker to prepare! If you have this often, you could always keep some ready mashed tofu in a container in the fridge.
Variations: Oh the variations! To have this as part of a main meal besides breakfast, more flavoursome things like garlic and freshly chopped chives or spring onions, even curry powder could be added. Why not add sautéed chopped veggies or mushrooms, soy sauce, lemon juice or mustard. |
