Dont know if any similar recipes have been posted previously, apologies if they have.
Ive never made a couscous salad before but I just tried this today and i am very impressed, excellent recipe!
Its from "Cooking with Kurma - More Great Vegetarian Dishes"
Couscous salad
The couscous (obviously cooking instructions are on packet)
1.5 cups couscous
1.5 cups water
1.5 teaspoons salt
1.5 tablespoons vegetable oil
Cook as per instructions on pkt - instructions exactly same as in cook book
The dressing:
4 tbls lemon juice
2 tbls vegetable oil
2 tsps sugar
3 tbls tahini
4 tbls fresh mint leaves, chopped ( i dont like mint so left this out, still tastes great without)
1 tsp freshly ground black pepper
1/2 tsp yellow asafetida powder
4 tbls fresh parsley, chopped
The remaining ingredients:
1/2 cup tomato, diced
1/4 cup red capsicum, diced
1/4 cup green capsicum, diced
1/4 cup green beans, cut in to 1.25cm lengths and steamed
1/2 cup cooked chickpeas
1/2 cup unpeeled diced Lebanese cucumber
1/2 cup sultanas
1/4 cup chopped green olives
1/4 cup small roasted peanut halves
Preparation:
1. Cook couscous, set aside for 10 min.s. Fluff grains with fork and transfer couscous to serving bowl to allow to cool thoroughly.
2. Combine all dressing ingredients in small bowl.
Mix rest of ingredients with cooled couscous. Add dressing and mix well. |
